Mixed Berry Cobbler

July is almost upon us, meaning July 4th holiday parties! Instead of slaving over a dessert that is labor intensive, wouldn’t you rather be outside enjoying the party with your friends and family!!??? I know I would!! So, try this dessert but never let your guests know that is was “easy”. It tastes complicated, trust me. A great summer treat! And if you serve it with vanilla ice cream, you have a perfect “Red, White & Blue” dessert.

Mixed Berry Cobbler

Ingredients

 Serves 10

  • 5 cup fresh or frozen strawberries, red raspberries, blackberries  (thawed and drained) and slice the strawberries
  • 2  cup sugar
  • 2 1/4 cup all-purpose flour
  • 4 1/2 teaspoon baking powder
  • 1 1/8 teaspoon salt
  • 2 1/4 cup milk
  • 1 1/8 cup butter, melted
  • whipped cream or ice cream, if desired

Cooking Instructions

1 In a medium bowl, stir together all berries and sugar. Let stand about 20 minutes or until fruit syrup forms. Heat oven to 375°F.

2 In large bowl, stir together flour, baking powder, salt and milk. Stir in melted butter until blended. Spread in ungreased 9×13-inch pan. Spoon berry mixture over batter.

3 Bake 45 to 55 minutes or until dough rises and is golden. Serve warm with ice cream. I prefer a nice vanilla gelato with this dish!
